Have you bought a fresh truffle or received one as a gift? Here's how to store it in order to enjoy it at its best.
The fresh truffle is a perishable product that is subject to weight loss. However, this does not mean that it cannot be stored for a few days, if properly prepared. Here is how best to store fresh truffles.
How to store fresh truffles
To store fresh truffles you will need some kitchen roll and an airtight container (preferably made of glass).
Wrap the truffle in a sheet of kitchen roll and place it inside the glass container. Repeat the procedure for each truffle. Close the container and place it in the fridge.
The ideal temperature for storing fresh truffles in the fridge is between 2 and 4°C.
You can store truffles in this way for up to eight days. To preserve their fragrance and aroma, change the paper used to wrap the carpophores every day.
If you are going to consume a truffle harvested in the colder months, you may be able to keep it for a few more days.
How to clean fresh truffles before using them in the kitchen
If you want to use fresh truffles in your recipes, remember to clean them. Here's what to do. Soak them in cold water for a couple of minutes, then brush them with a soft brush in cold running water. This will remove impurities and soil residues.
Let the truffles dry for at least ten minutes before using them.
